USIM Research Repository.https://oarep.usim.edu.my/handle/123456789/12649Matric:3212461(FST)Catfish was highly in demand among Malaysians, however farm-raised catfish is preferable than wild-caught catfish due to less metallic taste. Generally, the properties of catfish are influenced by their nutrient intake and habitat condition. In this study, one sample from wild-caught environment was obtained from Sungai Skudai (Johor Bahru) while three samples representing of earthen pond farm-raised were obtained from different locations with Sample A from Lanchang, (Pahang), Sample B from Simpang Renggam (Johor), and Sample C from Sungai Buloh, (Selangor). These samples were analyzed for chemical composition and Qualitative Descriptive Analysis (QDA). The results of moisture, protein, ash, and fat contents of farm-raised samples of catfish was significantly (<0.05) higher than wild-caught catfish. In fatty acid composition, 25 fatty acids were detected. Sample B and C of farm-raised catfish showed higher content of oleic acid (29.26%) and (29.29%) while linoleic acid (22.56%) and (31.85%) than wildcaught catfish (20.84%) and (13.44%) respectively. Wild-caught catfish were found to have sensory quality scores for ‘grassy’ odour and firmness higher than farm-raised catfish. However, farm-raised catfish have darker colour on top of fillet surface which is Sample A (11.9), and Sample B (11.6) were slightly higher than wild-caught catfish (11.5). The ‘black thread’ appearance in sample pond A catfish was the most obviously appeared. Concerning taste attribute, wild-caught catfish showed the highest scores of charred (3.9) and metallic taste (4.7) than farm-raised catfish.
